Mmmm..."Bread"



Thanks to this book, I made my first loaf of sandwich bread last weekend! I hate cookbooks...but I love this one.


I picked it up ages ago because I wanted something IN MY HANDS (aka not on the Internet) full of great "paleo" recipes. Grain free, gluten free, whole food kind of stuff. And it had to be simple. I'm not so good with recipes in general, and really terrible at the ones with lots of ingredients, and steps, and special tools. Blargh!

I marked the "sandwich bread" pretty much immediately, and BFF seemed excited to try it as well. But I have been putting it off. Why? Cause I'm lazy, that's why. And also..umm...nope, just lazy!


And then I had a bit of time to spare on a Sunday afternoon, and I was procrastinating washing dishes and this seemed like the perfect task for that! And look at how PRETTY my bread turned out!

Ingredients
3/4 cup almond butter, smooth
6 eggs
2 tbsp honey
1/4 cup coconut oil, melted
1/2 tsp apple cider vinegar
1/4 cup golden flax seed, ground
3 tbsp coconut flour
1 tsp baking soda
1/2 tsp sea salt

1. Preheat oven to 350F. Line a 4 x 8-inch loaf pan with parchment paper and grease well with coconut oil. Getting the parchment paper to stay in the pan was the hardest part of the recipe for me, which is amusing because I used to have a job in paper crafting!

2. In a large bowl, blend the almond butter, eggs, honey, coconut oil, and apple cider vinegar with an immersion blender.
I am in love with my immersion blender. In. Love.

3. In a separate bowl, combine the flax, coconut flour, baking soda, and sea salt. Mix the dry into the wet the immersion blender works great for this (...in love...), pour into the greased and lined loaf pan, and bake for 35 to 40 minutes.

The flavour is slightly nutty thanks to the almond butter, but not overwhelming. And the honey adds just the right amount of sweetness. It's moist, and dense, and so far it's amazing for sandwiches and snacking!

I have a feeling that I'm going to want to make a loaf every week. Even Dude gave it his approval! I mean...look at this sandwich.......
